A food, drink and travel writer who will eat you under the table.

Ailis Brennan-Zielinski is a London-based (and born, and bred) features writer, specialising in food, drink and travel. Along with her husband, drinks writer Tyler Zielinski, she is the Co-Founder of Zest (@zeststories), a social-first editorial platform for the bar industry.

After graduating from the University of Oxford in 2015, Ailis’s writing career started out at British GQ, where worked to produce the 2017 GQ Food & Drink Awards. She then spent three years writing about London’s restaurants and bars for the Evening Standard, followed by freelance writing for the likes of Condé Nast Traveller, Eater, Foodism, Departures, Hot Dinners and more.

Ailis simultaneously made the move into hospitality PR, joining Tonic Communications and working with high profile clients including two Michelin-starred Kitchen Table, World’s 50 Best-topping Mauro Colagreco and Sting’s wine estate Il Palagio.

Her food and drink-focused travels have taken her from Bologna to the Cayman Islands, from Tel Aviv to Hong Kong. Ailis has interviewed highly influential chefs such as Alain Ducasse, Asma Khan, Nobu Matsuhisa, Anne-Sophie Pic and many more.
